History Large and elegant, the mouth is expressed on nice fruity notes, with a long aromatic supported by a tannic structure full of suppleness. The overall impression is characteristic of the vintage: fruity and delicate at the same time, offering a pleasant light in the mouth.
Vinification Traditional vinification avoiding premature oxidation. Partial malolactic fermentation in stainless steel tanks for wine, vinification without malolactic wine processed wood (50%). Dosage "extra-brut" (4.25 g / l) to maintain balance between freshness and fruitiness without detracting from the character of the wine and its purity.
Aging Aged for at least seven years in the cellars of the Maison costantee temperature (12 ° C) to derive the maximum complexity and bring out secondary and tertiary aromas of the wine, signs of prolonged aging on the lees.
