Yield per hectare	7,000-8,000 kg/hectare.
Harvest	By hand, the third decade of September.
Fermentation temperature	16-18 °C
Fermentation period	8-10 days.
Vinification	Destemming of the grapes and subsequent skin maceration for 12 hours at a temperature of 15°C. Soft pressing and cleaning by static settling of the must obtained. Alcoholic fermentation for 8-10 days at a controlled temperature of 16-18°C.
Ageing	On noble lees in steel tanks with bâtonnage for at least 4-5 months.
Allergens	Contains sulphites
Pairing	It pairs well with cold starters, seafood and delicate fish dishes. Excellent as an apéritif.
