Soil composition Hilly, consisting of stratified marls and sandstones of Eocene origin rich in potassium.
Cultivation system Double Guyot.
Yield per hectare 6,000-7,000 kg/hectare.
Harvest By hand, by the third decade of September.
Vinification Destemming and skin maceration of the three types of grapes for 12 hours at a temperature of 10 °C. Soft pressing and cleaning by static settling of the must obtained. Alcoholic fermentation in oak tonneaux for 8-10 days.
Ageing From the end of fermentation, ageing on the noble lees in oak tonneaux with continuous bâtonnage until bottling. This is followed by 12 months of bottle ageing before marketing.
