The term icewine identify those wines made from the fermentation of frozen grapes , late harvested at the beginning of the winter season, when the temperature drops below -7 ° C.
The rapid collection and pressing of frozen grapes makes possible a high concentration of sugars and usually also prevents the formation of the "noble rot", which allows to obtain wines that have considerable sweetness but also a high acidity; this distinguishes them from other sweet wines such as Sauternes.
