Moet & Chandon Dom Perignon Champagne P2 2004
The uniqueness of Dom Pérignon Vintage wines lies in their ageing process, which is not based on a mere linear path but on specific expressive phases. These periods are called "Plénitudes", privileged moments in which the wine vibrates at higher and more intense frequencies. P2 is Dom Pérignon's Deuxième Plénitude, the fruit of 16 years of elaboration. The energy reaches its peak. With its dark, mineral, iodine and spicy notes, the uniqueness of Dom Pérignon appears clearer and more intense than ever before. Discover P2, the absolute Dom Pérignon.

Bouquet

The bouquet is ripe, tonic and generous. Warm notes of hay and brioche mingle with hints of bergamot and warm golden stone fruit; smoky grey accents over the whole.

Flavour

The opening is vibrant and imposes itself directly, a prelude to a richness that is more tactile than fleshy, which only gradually reveals itself. Refined, the viscosity is restrained and blends harmoniously with the contours of the wine. The persistence is exquisitely bitter and juicy, with nuances of liquorice and toasted malt.

Pairing

Consistency is the fundamental characteristic of this Champagne. How to reveal it by bringing out the best in this wine? Through bold pairings, such as a concentrated beef broth or whelk ravioli with parsley. Surprisingly, the essence reveals through small details in rich and complete dishes: fried artichokes, sea bass, peach and kombu fruit salad, potato flakes, milk foam and caviar.
