The grapes are hand-picked in vineyards with excellent terroir,managed by us in order to obtain a sparkling wine of great character and structure. Pietro Chiarlo, Michele Chiarlo's father, was an excellent winegrower who, from 1920 to 1923,worked in a famous Piedmontese sparkling wine company as a specialised worker in the remuage (riddling) and degorgement department, gaining the qualification of "champagnist", as this task was then described in the French-Piedmont school.This period always remained in his heart as an exciting and unforgettable one.We have dedicated to him this cuvèe, composed of two noble vines grown in Piedmont, reaping the fruits of the company's experience in Classic Method production,which dates back to 1974.

Colour

Intense golden yellow with bright reflections, a delicate and persistent mousse.

Bouquet

Rich, embracing, highly elegant with clear notes of candied fruit, toasted hazelnuts,withered flowers, ennobled by pleasing mineral sensations.

Flavour

Ample,with a great structure, elegantly pleasing, possessing silkiness and a remarkable freshness.

Pairing

Excellent as an aperitif or with seafood, and wonderful throughout the meal.

Vinification After separate fermentation, the Chardonnay is left to refine for 6 months in 700-litre barrels, then one proceeds to the formation of the cuvèe and to bottling for the creation of the mousse. Thus it remains on its own yeasts for at least 30 months before degorgement.
