||50% Chardonnay, 50% Cortese
||After separate fermentation, the Chardonnay is left to refine for 6 months in 700-litre barrels, then one proceeds to the formation of the cuvèe and to bottling for the creation of the mousse. Thus it remains on its own yeasts for at least 30 months before degorgement.
||Excellent as an aperitif or with seafood, and wonderful throughout the meal.
