||Vinified after a slight withering of about 20 days. Light maceration in the press for about 2 hours at a temperature of 15 degrees Celsius concomitant with soft pressing. Fermentation takes place at a low temperature of 15 to 10 °C for 25 days in order to enhance the freshness and aromas. Malolactic fermentation is inhibited to maintain acidity.
||Then follows the froth with the Charmat method. 1 month of stay on the yeasts.
||Excellent above all as an aperitif with salumi or fresh cheeses; enjoyable with food during the meal, particularly summer dishes such as insalata caprese, main-course salads and cold roast beef.
