The extraordinary freshness resulting from the use of Pinot Grigio is accompanied by an impressive fruity structure and a unique (“ramato”) copper-tinged colour enhanced by a brief period of appassimento. Masi’s expertise in appassimento meets the tradition of easy-drinking sparkling wines typical of the Venetian regions.

Salmon rose of medium intensity, particularly bright.
The nose is striking for its elegant notes of berries, in particular currants, accompanied by floral scents.
On the palate, although pleasantly fresh and immediate, it is surprising for its structure with aromas of ripe fruit also present in the dry finish.

History The term Appaxximento certifies Masi's expertise in drying in the 21st century and is used in the specific symbol that distinguishes, on the back label, all Masi wines from dried grapes.

Production technique Masi’s expertise in grape drying technique.
Vinification Vinified after a slight withering of about 20 days. Light maceration in the press for about 2 hours at a temperature of 15 degrees Celsius concomitant with soft pressing. Fermentation takes place at a low temperature of 15 to 10 °C for 25 days in order to enhance the freshness and aromas. Malolactic fermentation is inhibited to maintain acidity.
Aging Then follows the froth with the Charmat method. 1 month of stay on the yeasts.
