Soil composition The thin, well drained top soil is lying on a layer of limestone with a significant presence of clay with a water-retaining function.
Vinification 25% whole bunch, short cold maceration, two "pigeage" a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction.
Ageing 18 months in French oak casks. 55% new, light and long soft toast from Allier and Jupilles forests. No fining, no filtration.
