Fermentation temperature 16-18 °C
Vinification The ripe grapes harvested by hand are vinified 'white' with crushing and soft pressing, using the semi-reduction technique (no and/or low oxygen content). The clarity of the must is obtained by cold static decantation for 24 hours. Fermentation takes place at a controlled temperature of 16-18 °C using cold technology. This is to maintain all the varietal aromatic fragrance.
Ageing Maturation until January/February in temperature-controlled containers.
Allergens Contains sulphites
Pairing Aperitifs, vegetarian and seafood cuisine delicate seafood dishes.
