Vinification |
Separately destemmed and crushed grapes are macerated in steel tanks. Fermentation alternates between punching-down, delestage and pumping-over for about 10-12 days. |
Ageing |
After racking and pressing, the resulting wines are racked into large 25-hl oak barrels. After 6 months, the two wines are blended, and the wine is bottled the following month. |
