||It makes what is known as a love match with legumes: in Tuscany you are spoilt for choice: chickpea, bean, chickling vetch and lentil soups, with the inevitable "spin" of intense extra virgin olive oil and aromatic herbs to taste. But it has the vigour to withstand visceral dishes such as lampredotto.
