Vinification	Vatting with 33% whole grapes, moderate punching down and pumping over. Spontaneous fermentation with indigenous yeasts.
Ageing	Aged in 600 litre barrels (demi-muids, about 15% new wood) for 12 months, then 5 months in stainless steel tanks.
