Vinification |
Cold pre-fermentation maceration for about 48 hours. Soft pressing of the grapes, static clarification of the must, part fermentation at a controlled temperature of 16°C in steel tanks and part alcoholic and malolactic fermentation in barriques. |
Ageing |
For about 10-12 months on the fine lees in both steel tanks and small oak barrels with weekly bâtonnage. Once bottled, it is further aged for a further 4 months in the bottle before being marketed. |
Pairing |
It perfectly pairs with Tuscan, strong-flavored appetizers, truffle risotto, roasted fish, smoked eel, white and rosé meat, medium-aged cheeses. |
