Perlage

Fine and persistent.

Colour

Yellow with grey hues.

Bouquet

Hints of toasted bread, butter, honey, hawthorn and toasted almond. The bouquet then gives fruity notes, such as blackcurrant, liquorice, figs and mango, followed by vegetable sensations of black pepper and nutmeg, with a hint of peony. The olfactory sensation is not interrupted, powerful and refined, with a touch of the two best terroirs of the Montagne du Reims: Verzenay and Verzy.

Flavour

The mouth is dense and generous. It is fresh and fruity, with a creamy effervescence. The fruity density is reminiscent of plum. A chalky mineral flavour that is refreshed by a note of acidity but still soft.

Pairing

It pairs well with foie gras on lightly peppered gingerbread and mango, grilled prawns and tomatoes in oil, lobster with prawn sauce, baked young pigeon with figs, loin of lamb cooked in thyme, sheep's cheese and marmalade.
