||One of our vineyard of 30 hectares in San Sisto, 350 meters above sea level, we chose the 12 acres that soil composition and microclimate are ideal for producing grapes for this Cru.
||The entire production process is characterized by the utmost attention to detail, from selecting the grapes to the choice of barrels and the length of time of aging. Fermentation takes place already in French oak barrels, well measured between first, second and third step, where San Sisto is to mature for 10-12 months. Then you have at least another year of aging in the final bottle.
||San Sisto is ideally matched with seafood dishes, pasta, baked fish, and poultry in general.
