The harvest took place during the second week of September strictly by hand. |
Vinification |
The grapes, once transported to the cellar, are softly pressed into round grains. The must obtained is cold decanted for 24 hours. Fermentation takes place in steel casks at a controlled temperature that remains constant between 18 and 20 °C. |
Ageing |
On its own yeasts for 6 months during which frequent "battonage" is carried out. |
Pairing |
It goes well with risotto and substantial first fruits and processed food. Particularly suitable to accompany seafood and shellfish. |
