Harvest	The grapes are harvested and sorted by hand, then gently destemmed.
Vinification	The grapes are cooled to 8-10 degrees and macerated in contact with the skins for 36 hours. Soft pressing is carried out after which fermentation begins in large 20-hl oak casks.
Ageing	24 months in large casks of 1500 litres. Then, it ages in the bottle for 6 months.
