History Surrounded by ramparts and bastions like a barrel by its staves, Beaune is the only city in the world where, as the architect Viollet-le-Duc said, one wants to fall ill. Built in the mid-fifteenth century by Nicolas Rolin, advisor to the Duke of Burgundy Philip the Good, the Hotel-Dieu Flamboyant Gothic tells the romance of love of Burgundy and Flanders at the time of the Golden Fleece. Aging Duration: 13 months Type: in barrels. Percentage of new oak: 40% Warm and slow heating. Origin of woods: Nevers and Allier. Racking part of the new barrels. No gluing, light filtration.
