Our Beaune assembles several small parcels from the Montée Rouge climat, grown on both sides of a ruddy, iron-rich coomb. Known by wine growers as The White Virgin , the south-facing vine has the structure and power of a quality wine that is fat, rich and astounding.
Dark red.
Very ripe aromas of redcurrant and leather.
Intense flavours of raspberry, chocolate, leather and herbs. Rich style but a touch dry on the back.

History Surrounded by ramparts and bastions like a barrel by its staves, Beaune is the only city in the world where, as the architect Viollet-le-Duc said, one wants to fall ill. Built in the mid-fifteenth century by Nicolas Rolin, advisor to the Duke of Burgundy Philip the Good, the Hotel-Dieu Flamboyant Gothic tells the romance of love of Burgundy and Flanders at the time of the Golden Fleece. Sister of Bruges, Beaune is the capital of the wine of Burgundy. For centuries, we call "wine of Beaune" the wine of the entire Côte de Beaune. From the beginning of the XVIIIth century, the truly Beaune identity of the vines gradually takes shape to assert itself fully in the following century. As Burgundy wine is traded primarily in Beaune, the city becomes very early in history the soul of this wine. Petrarch attributes to the wine of Beaune the little eagerness of the cardinals to leave Avignon for Rome. The Duke of Burgundy often sends barrels of Beaune wine to the pope to obtain his good graces. As the local wisdom says, "the wine of Beaune loses its cause for lack of comparing". Cultivation system Guyot - Transplants in autumn. Beating of vines in winter. Spray of herbal tea of nettle and rhubarb (new), decoction of horsetail and silica, willow, horsetail, yarrow and tansy. Biodynamic preparation, 500 and 501 at the end of winter and spring, and 501 before the flower. Evasivage in the spring.

Vinification 100% destemmed grapes, untrimmed and gravity fed. Without yeasting or enzyming. Cold pre-fermentation maceration (12-15 ° C) for 5 days. 28 days of vatting. A pigeage per day until mid fermentation, then a light winding per day until vatting. Pressing with the vertical press.
Ageing Duration: 13 months Type: in barrels. Percentage of new oak: 40% Warm and slow heating. Origin of woods: Nevers and Allier. Racking part of the new barrels. No gluing, light filtration.
