Vinification	30% of whole bunches are placed in open vats from 1 to 12 tons with pumping over carried out even 3 times a day. Only indigenous yeasts are used. The wine is bottled in December of the year following the harvest without being filtered.
Ageing	12 months in French oak barrels (11% new barrels).
