Harvest |
Between late August and early September. The grapes are harvested and placed in boxes with exclusively manual selection. |
Vinification |
The winery's vineyard area extends over about 20 hectares divided into small parcels, of which the Pinot Nero grapes are harvested and vinified separately to enhance the characteristics of the terroir. The grapes are destemmed but not crushed to keep the berries whole, and whole cluster vinification is carried out on about 10% of the mass. Cold pre-fermentation maceration is followed by fermentation in temperature-controlled stainless steel tanks with brief daily pumping-over. Once fermentation is complete, racking follows, and malolactic fermentation is carried out in stainless steel. |
Ageing |
About 6 months in stainless steel until bottling. It then ages for at least 2 months in the bottle before marketing. |
