Soil composition |
The soil that distinguishes this wine is characterised from its formation, originating from the Chianti massif, by a high level of compact limestone stoniness resting on a sandstone base. This type of soil restrains the vigour of the plant, lengthens the vegetative cycle and enhances the structure of Chianti. |
Harvest |
From Mid-September to mid-October. The Sangiovese grapes, meticulously hand-picked with the selection of the best bunches. |
Vinification |
The Sangiovese grapes are destemmed and vinified in stainless steel tanks. Temperature-controlled fermentation takes place at 24-27 °C with maceration on skins for 15-20 days. |
Ageing |
36 months' ageing in large wooden barrels, with small percentages of wine aged in barriques. |
