Harvest |
Mid-October. After harvesting, the grapes are concentrated in the fruit cellar, a technique that enhances their aroma and body. |
Vinification |
The skins' fermentation lasts about 3 weeks in small, automatic, thermo-controlled steel vats. |
Ageing |
Maturation, from the following spring, continues in Allier barriques for at least 18 months. This is followed by refinement in the bottle for a further 18 months. |
Pairing |
It pairs well with noble feathered game, pigeons and ducks. Pappardelle with hare, wild boar and roe deer. Moreover, it pairs well with Friulian cuisine: baked mallard and kren-scented goose with fig mustard. |
