On the nose, very fine and intense fresh fruit aromas such as apricot, pear and fresh grapes.

Flavour

The wine is smooth and delicate, with long-lasting flavours. The palate is well-balanced, with a slight menthol freshness on the finish.

Pairing

It pairs well with dishes, such as medium-cooked foie gras accompanied by thin slices of lightly toasted sourdough bread or a nice portion of smooth Roquefort. Also delicious with an assortment of ice creams and sorbets (melon, strawberry and menthol chocolate), lemon liqueur or a blanc-manger accompanied by wild blueberries.

Vinification The grapes are pressed whole without destemming, avoiding high pressure. Only the first and second presses are used for this cuvée. The juice is settled at 4°C for 36 hours. Fermentation lasts for 8 days at a temperature of 16°C, then fortification of the Muscat with a neutral alcohol.
