||25% Syrah, 50% Grenache, 25% Mourvedre
||After harvesting, the grape buches are de-stemmed and gently crushed prior to a period of over 3 weeks of tank fermentation.
||Each grape variety is vinified seprately at peak ripeness.
||After the must is pressed, juices are blended and the wines embark upon their maturation period. Thirty percent of the wines are raised in French oak barrels, one-fourth of which is replaced every 4 years. Our wines barrel mature for 6 to 10 months dependig on the village and on aeach wine's potential.
