Harvest The vineyard lots are harvested at different times to ensure optimal natural acidity and moderate alcohol levels.
Vinification The whole berries are hand-picked in small fermentation boxes and 225-500-litre barrels. The batches from each vineyard are treated individually. Fermentation and maceration last 28-30 days with wild yeasts. Then, alcoholic and malolactic fermentation occurs in barrels. The wine undergoes active bâtonnage to protect it and drastically reduce the amount of SO2 required.
Ageing 18 months in French oak.
