||The grapes, selected in the vineyard and harvested by hand, are de-stemmed and lightly pressed, the must thus obtained is fermented spontaneously in truncated-cone-shaped wooden vats of 53 Hl. Once the alcoholic fermentation is finished, the wine will still remain in contact with the skins for a period of about 20-25 days before being decanted into cement tanks to facilitate the start-up and malolactic fermentation.
||50% of the mass stops for 18 months in Slavonian oak barrels, the remaining 50% ages in 225 lt second and third passage barriques.
