| Vinification |
After destemming and light crushing of the grapes, the must obtained is introduced into steel tanks at a controlled temperature of 25-28°C where, for a period of time varying from 15 to 20 days, spontaneous alcoholic fermentation, without the addition of exogenous yeasts and subsequent maceration on the skins, takes place. After that, malolactic fermentation takes place in concrete tanks. |
