Vinification |
Vinification is carried out in open truncated oak vats. Depending on the vintage and the wine, a percentage of whole grapes is kept. Fermentation is done with indigenous yeasts, with some manual punching down. The pressing is delicate (pneumatic press). After settling, the wines are transferred to barrels by gravity. |
Ageing |
The wine is aged for 18 months in fine-grained oak barrels of French origin (Tronçais, Allier) with about 30% new barrels for the Grand Cru and 1er Crus, slightly less for the "Village" and "Burgundy" appellations. The crus are neither fined nor filtered. The wine is bottled under neutral gas in order to minimise the amount of S02. The bottling periods are chosen according to the lunar calendar and atmospheric conditions. |
