Vinification |
De-stemming, prefermermative maceration and déléstage, fermentation and maceration on the skins for approx. 15 days at controlled temperature (27 °C). The must ois pumped over 4/5 times per day, then the "submerged cap" maceration from 30 to 60 days, depending on the grapes charcteristics. The malolactic fermentation is completed right after after the alcoholic. |

24 motnhs in barresl of 20 HL of Slavonian Oak and then 12 months in bottle. |
Pairing |
Ideal frot grilled foods, sauced and elaborate red meat and wild game. Also as a meditation wine after the meal with dark chocolate and pâtisserie. |
