||The harvests are carried out during the night.
||The grape reaches perfection in the cellar, the most noble and aromatic raw ingredient, a winemaker’s dream. At this stage we can only preserve and enhance the wine that nature has put at our disposal. The fermentation of the must takes place very slowly at low temperatures.
||The wine is then aged for 5 months in steel containers on a bed of fine lees in order to enhance its varietal characteristics and to provide the wine with structure and elegance.
||Ideal with herb-based first courses, such as risotto and field herbs or asparagus, hop sprouts, lasagne and crespelle, tortelli with herbs or flowers. It goes very well with shell fish, well-seasoned cured ham and with some alpine cheese. Try it with vegetarian or vegan dishes such as salad with fennel, tomatoes or peppers or creative salads that combine fruits and vegetables.
