Vinification	Traditional vinification. The grapes are destemmed and crushed. Fermentation on the skins in stainless steel at a controlled temperature. Salassage is carried out to have more skin on less must.
Ageing	After fermentation the must is drawn off and pumped into stainless steel containers for malolactic fermentation and maturing for approx. 6 months.
