||The grapes are harvested between late September and early October.
||The four different varieties are fermented separately in stainless steel vats at a controlled temperature for 12-16 days. The second fermentation, also called malolactic fermentation (to which they are subjected all red wines), and also the aging in wood occur in French oak barrels of 225 liters new.
