||80% of the must is fermented in stainless steel tanks at controlled temperatures, the rest plays the alcoholic fermentation in tonneau after which the malolactic fermentation takes place.
||After 10 months, the wine aged separately, are assembled and after bottling the wine is aged for another 8 months in bottle.
||To pair with fatty fish or smoked; sardines in saòr, baked fish and white meats with sauce.
