Vinification	Grapes are selected in the vineyards and quickly transported to the winery in 15 kg crates. Grapes are not destemmed before entering a pneumatic press for low-pressure pressing. Fermented with its yeasts and matured on the lees in 14-year-old 2,200-litre French oak barrels for 11 months with bâtonnage. It is then bottled with moderate levels of sulphur and without clarification.
