Recaredo is one of the wineries that have contributed to increasing the perception of the quality of Cava DO sparkling wine, demonstrating concretely that Spain can also compete with the great classical method of the international scene.

The company was founded in 1924 by Josep Mata Capellades, an ambitious and long-sighted man who laid the foundations for the future almost a century ago, building the splendid rock cellars with his hands, armed with a shovel and a pickaxe. The third generation, which can count on 50 hectares of vineyards located in the Alt Penedès region, brings the name of Recaredo to the top, where the varieties traditionally used in the production of these fine sparkling wines such as xarel-lo, find space in the calcareous soils. parellada, monastrell, macabeo and pinot noir, cultivated in compliance with the strictest principles of organic and biodynamic agriculture.

In the cellar the cuvées are subjected to long maturation on the yeasts starting from a minimum of 30 months, up to over 30 years in the case of particular as rare reserves. All the bottles face their slow rest with the use of cork stoppers instead of the more common crown corks: Recaredo was the first producer of sparkling wines in the world to obtain the certification of "aged with cork". The famous Spanish house does not resort to sugaring during the dosing phase and the sparkling wines are all “brut nature” - therefore with a dry taste - in order to express the full potential of the grapes used, without affecting that complexity gained through meticulous processing and by effect. evolutionary processes that only time can give.

The artisanal dimension of Recaredo is also well represented by the disgorgement process that is performed - a real treat for enthusiasts - strictly by hand. The range consists of five labels, all designed with the same passion.
We are talking about bottles produced through meticulous practices in the vineyard, followed by equally scrupulous and patient cellar operations, up to the achievement of an elegant and refined stylistic expression.
