Samuel Billaud after 20 years as a wine producer on the family estate, in June 2010 he created his own winery as a wine producer. It offers a range of high level choice. Vinification takes place in thermo-INOX tanks and small volumes in barrels of 450 to 600 liters.
In September 2014, Samuel Billaud becomes an oenologist and manages 4 hectares of vineyards scattered throughout the denominations of Petit Chablis, Chablis, Chablis Premier Cru Séchet, Mont de Milieu, Montée de Tonnerre, Chablis Grand Cru Vaudésir, Les Clos.
