Frédéric Cossard founded his own winery, "Domaine de Chassorney", in 1996, after extensive studies and important field experiences. The company is located in Saint-Romain, a small municipality that rises on the gentle hills of the Hautes Côtes de Beaune and the seven hectares of property are divided between the municipalities of Saint-Romain and Auxey-Duresses.
In 2006 Frédéric, together with his wife Laure, also created a négoce, dealing with the vinification of a wide range of wines from the cru of the Côte de Nuits and the Côte de Beaune. Frédéric follows a concept of natural agriculture, without the use of chemical fertilizers and herbicides. The harvest is always carried out manually, the vinification takes place in wooden cuves, without destemming, with only indigenous yeasts and without any addition of sulfur dioxide, while the aging for red wines is done in oak barrels for 12-15 months.
