Description

The Passerina grape is a very ancient white grape variety originating in central Italy. Its native land is most likely located towards the Adriatic coast, in the Abruzzo and the Marche regions. It certainly belongs to the group of Trebbiano grapes. Its name derives from the rather small size of its berries and the fact that sparrows often peck at them. The characteristic feature of this vine is its good capacity to accumulate sugars without a corresponding decrease in acid components at harvest time. It is therefore very often characterised by strong acidity.

Tenuta Ulisse is tied to the historical vines of Abruzzo, to the traditions of the places where they are cultivated and vinified, the sap of a millenary culture that still nourishes our passion for wine. A company with a return to its origins, in love with wine and Abruzzo. Tenuta Ulisse's objectives are dictated by values of simplicity, through work and knowledge, in a stronger experience of one's own land, of different markets and cultures in a changing world. Harvest Grapes are sorted and chilled in the company's exclusive cooling tunnel with an immediate drop in temperature followed by skin-cold maceration and extraction of aromatic compounds.
Fermentation temperature 11 °C
Wine making Destemming, pressing in an inert environment, cold static clarification. Slow fermentation at a controlled temperature of 11 °C in temperature-controlled and inert tanks.
Aging 3 months in stainless steel followed by refining in the bottle.
