What kind of wine it is

Unico Merlot Rosé by Tenuta Ulisse is a still rosé wine made from Merlot grapes from Abruzzo, in the Terre di Chieti denomination, produced through white vinification with cold cryomaceration. It presents a bright and inviting colour, offering intense aromas of fresh red fruits, including blueberry and raspberry, combined with delicate floral notes of rose. On the palate, it displays a good acidity that brings liveliness to the sip, faithfully echoing the olfactory sensations. The harmonious taste culminates in a very persistent finish, ideal as an aperitif or to accompany light cured meats, white meats, and fish dishes.

Where it comes from

This wine originates in Abruzzo, in the Terre di Chieti area, in Crecchio. Here, the vineyards benefit from unique characteristics in terms of exposure and soil composition, which Tenuta Ulisse enhances to reflect the vocation of the place. In this Abruzzese microclimate, the Merlot grape develops an original character, focused on maximum expressive freshness and a clear aromatic definition, highlighting the vitality of the grapes.

How it is produced

The whole grapes are cooled to lower the temperature and start the skin cryomaceration, an ideal technique for extracting the finest aromatic compounds. This is followed by destemming, cold maceration, and pressing in a protected environment. The slow fermentation takes place in stainless steel tanks, followed by ageing in the bottle. This vinification process yields a rosé with a fragrant profile that carefully preserves the identity of the grape variety.

Reviewed by critic Luca Maroni, the 2025 vintage highlights the rich ampelographic heritage of Crecchio and is elegantly sealed with the modern VINO-LOK glass stopper to best preserve its identity and freshness.

Served between 8 and 10 °C, this elegant still rosé is an excellent aperitif. Its lively acidity gracefully enhances light starters, such as prosciutto and melon, or tempting charcuterie boards. At the table, it creates an ideal harmony with delicate flavours, masterfully accompanying dishes based on white meats, lean fish or cod, for an extremely pleasant tasting experience.
