What kind of olive oil is this?
San Marzano Olio Extra Vergine d’Oliva is an authentic blend crafted primarily from Coratina and Ogliarola Leccese olives. This medium-fruity oil presents a bright green colour with subtle golden reflections. On the nose, it offers an elegant bouquet characterised by inviting notes of green tomato and fresh grass. The palate is smooth and fluid, delivering delicate hints of almond that culminate in a pleasantly peppery finish. Thanks to its balanced profile, it is perfectly suited for use raw, beautifully enhancing steamed or raw fish, shellfish, delicate starters, and light first courses without overpowering their natural flavours.
Production process
Harvesting occurs at optimum ripeness between November and January using the brucatura method, which combines hand-picking with mechanical shaking. The fruit is processed immediately in a continuous-cycle plant to ensure optimal freshness. Milling is followed by cold extraction and purely mechanical separation, yielding a natural product free from preservatives. To maintain its delicate sensory profile, this oil requires careful storage in a cool, dry place away from direct light and heat sources.
History and Heritage
Since 1962, San Marzano has been crafting premium extra virgin olive oil in Apulia. Guided by oenologists Caterina Bellanova and Davide Ragusa, the estate manages 1,500 hectares of land and produces up to 12,000,000 bottles, preserving authentic traditions like the brucatura harvesting method.

In 1962 19 vine growers from San Marzano, whose families had farmed the land for generations, combined their efforts to establish "Cantine San Marzano".
Through the decades this coooperative has grown significantly, attracting over 1,200 vine growers, using modern and technologically advanced plants and producing elegant wines without forgetting the obligation to the very old Apulian wine tradition.
Nowadays the fusion of time honoured tradition, passion and sensibility with contemporary techniques enables us to produce wines with distinctive varietal and regional characters, marvellously reflecting individual attention, seasonal variation and local terroir.
