Description
We wanted to create a new quality, a new style. For these reasons, we decided to mix grape varieties (i.e. must) during fermentation. In this way we obtain a completely new wine in which one type does not prevail over the other as happens when mixing ready-made wines. By mixing the grape varieties (i.e. must) during fermentation, we obtain a base wine that is ready for finalisation only after three years of maturation. To the Veliko Belo wine we sometimes add a few percentages of aged wines with which we maintain a constant elegance that must be present in all great wines. In Veliko Belo we find greater evaporation, which is the consequence of a long rest in oak barrels, where it oxidises. This increases the wine's importance and elegance.
