Description

Avvoltore is the company’s flagship wine. The grapes are collected from vineyards planted on the “Poggio dell’Avvoltore” hill. Its clay-limestone soil produces a strong and powerful tannic structure. The first vintage was in 1988, the blend has changed very little since then and, in recent years, has always featured these grapes: Sangiovese, Cabernet Sauvignon and Syrah. The name describes the Maremma Falcon, a bird of prey that often flies over these vineyards.

Three hundred years ago the Moris Family left Spain and settled in the Tuscan Maremma. Harvest Second and fourth week of September and the first and second week of October.
Wine making Fermentation in concrete vats, with temperature control and two daily pumping-overs for the first 10 days. The wine remains for a further 15 days in contact with the skins before being drawn off and immediately put into 225-litre barriques, of which 80% are new, where malolactic fermentation occurs.
Aging It stays in the wood for about a year and is racked during this period. The wine remains in the bottle for six months before being marketed.
