Champagne Les Empreintes Extra Brut by Laherte Frères is a refined blend crafted according to the Traditional Method, harmonising the structure of Pinot Noir with the freshness of Chardonnay. The flavour profile is dry, savoury, and vibrant, characterised by a marked acidic tension and a fine and persistent perlage. On the nose, distinct aromas of lime, pineapple, melon, and yellow peach emerge, introducing a mature palate enriched by delicate umami nuances. This bold personality makes it ideal for pairing with shellfish, sushi, soft cheeses, and fried seafood.

Where it comes from

This wine originates from the Champagne region, specifically from the Coteaux Sud d'Épernay, in Chavot-Courcourt. Vineyard management aims to enhance the identity of each individual parcel, where chalk and clay soils merge with matrices rich in flint and limestone. This particular geological stratification shapes the wine's mineral component, giving it a distinctively savoury character. The result is a glass that reflects the natural characteristics and dynamics of its terroir in a taut and direct manner.

How it is produced

Production involves separate vinification for each parcel and gentle pressing. Fermentation takes place in wooden barrels and malolactic fermentation is not carried out, in order to preserve a taut and vibrant acidity. The wine matures in the same barrels to stabilise, before undergoing secondary fermentation in the bottle as per the Traditional Method. The absence of filtration and the calibrated extra brut dosage preserve its expressive integrity, offering a dry palate and a saline finish of extreme precision.

The Laherte Frères winery is a small family business in Champagne, divided into 72 microplots spread throughout the region with a total of 10 hectares of vineyards. It was founded in 1889 by Jean-Baptiste Laherte and is now run, following the criteria of biodynamic agriculture, by brothers Christian and Thierry, assisted by their nephew Aurélien, the sixth generation of the family.
The Laherte brothers' vineyards extend over three typical Champagne locations: Épernay, Côte des Blancs, and Vallée de la Marne; a total of 10 historic crus. The cultivation philosophy involves absolute respect for traditions and a preference for natural methods in place of chemical products: use of plant compounds to increase the defensive capacity of the vines, non-invasive pruning that maintains developed foliage in height, organisation of work and treatments according to the most auspicious days. The production process involves separate vinifications for each Cru to make the most of micro-climatic variations, followed by a work of selection and combination of the wines produced to create a harmonious, elegant and fruity Champagne. Fermentation is slow and spontaneous; one or two racking takes place before bottling.
