| Wine making | Selection and destemming of the grapes without crushing and passage into stainless steel tanks. Cold maceration at 5 ºC for 6 days before fermentation. Fermentation took place at a controlled temperature of 28 ºC for 14 days with 3 daily pump-overs. Total maceration was carried out over 20 days. Racking was carried out by gravity and then a vertical press was used. Malolactic fermentation took place in stainless steel tanks. |
