What kind of wine it is
Kettmeir's Pas Dosé is a rigorous sparkling wine produced using the Traditional Method that showcases Chardonnay in its purest form. In the glass, it displays a brilliant straw yellow colour, enhanced by a fine and persistent perlage. The bouquet releases aromas of broom, wintersweet, banana and mango, accompanied by delicate yeast notes. On the palate, it is fresh and dynamic, supported by an extremely fine mousse. The absence of dosage ensures an energetic and vibrant sip, ideal for pairing with seafood, caviar and Japanese sushi.
Where it comes from
This wine originates in Alto Adige, from the vineyards of Pochi di Salorno. The vines grow on hillsides at an altitude of 520-550 metres above sea level. The terroir is characterised by calcareous soil with a good clay content and traces of porphyry. This specific geological composition combines with the mountain climate to give the wine a linear flavour progression, providing a well-defined structure and a bright finish with a deep Alpine character.
How it is produced
The late August harvest is followed by a gentle pressing of the grapes to extract a pure must. Primary fermentation takes place in temperature-controlled stainless steel tanks. With the addition of the liqueur de tirage, the wine undergoes secondary fermentation in the bottle, remaining on the lees for at least 38 months, which is essential for developing the complexity typical of autolysis. At the time of disgorgement, the topping up is done exclusively with the same wine, with no addition of liqueur d’expédition, thus preserving the absolute integrity of the zero dosage.

And it is in the historic wine cellar, where both the wines rest in barrels and the classic method sparkling wines on ancient pupitres, that part of Kettmeir's success is realised under the watchful eye of oenologist Josef Romen.
The other place is the vineyards, stretching from Kaltern to the Ebnicherhof to Salurn, where Pinot Noir, Chardonnay, Sauvignon, Moscato rosa and many other grape varieties grow, cultivated with absolute care, respecting all their varietal peculiarities.
