Champagne 1er Cru Blanc de Blancs Oenophile Non Dosé by Gimonnet is a rigorous expression crafted according to the Traditional Method. Made exclusively from Chardonnay grapes, it is a Brut Nature created without the addition of sugars to enhance its precise taste profile. In the glass, it reveals a fine and persistent perlage, while the nose offers fruity and citrus notes, followed by hints of brioche. On the palate, it is creamy and structured, with a perfect balance between freshness, savouriness, and a profound chalky minerality that defines the clean, dry finish.

Where it comes from

This wine originates in France, at the heart of the renowned Côte des Blancs. The careful blend combines grapes from historic Grand Cru villages, including Cramant and Chouilly, with a selection from Premier Cru vineyards in Cuis. The vines, which reach up to seventy-five years old, are deeply rooted in soils with a pronounced chalky character. This synergy gives the Champagne great aromatic depth and a structure capable of evolving elegantly over time, bringing all the authenticity of its origin to the glass.

How it is produced

The process begins with a rigorous manual harvest, followed by fractional pressing and cold settling. After alcoholic fermentation and completion of malolactic fermentation, the wine matures for eight months with several rackings. The secondary fermentation in the bottle follows the principles of the Traditional Method and is enhanced by ageing on the lees for at least five years, allowing a creamy texture to develop. Disgorgement takes place three months before release, confirming the absolute absence of dosage to maintain a pure sip, ideal alongside seafood.

This refined Blanc de Blancs is made from hand-picked Chardonnay grapes from historic vineyards up to 75 years old. The meticulous blend skilfully combines 71% Grand Cru from Cramant and Chouilly with 29% Premier Cru from Cuis. After a long maturation of at least 5 years on the lees, the result is an extraordinary classic method pas dosé, with no added sugars, boasting vibrant minerality.

The history of the Gimonnet family has been linked to the Champagne region since 1750, but it is from the middle of the 20th century that Pierre Gimonnet, together with his sons, began to create cuvées of great importance, based on the Chardonnay vine.

We find ourselves, not surprisingly, in the Côte des Blancs, where from the 28 hectares of property, the company Pierre Gimonnet produces grapes with which it produces Champagne with a distinctive and absolutely recognizable style. Being able to count on vineyards that reach up to 75 years of age, conducted in full and total respect for the environment, the Maison Pierre Gimonnet adds wisdom and perfection.

The vinification is based on traditional methods, with grapes that are harvested manually and left to ferment in small vats.

The malolactic fermentation follows, after which a single light filtration is carried out before the tirage, while the disgorgement takes place only 3 months before the product is shipped.

Finally, the topping off is light and delicate, so as not to mask the natural, elegant and fresh style of Chardonnay.
