Where it comes from
The grapes intended for this sparkling wine come from the Crémant de Bourgogne territory and are carefully selected by François Martenot. The production area encompasses the Côte de Nuits, Côte de Beaune, Côte Chalonnaise and southern Burgundy, ensuring a precious pedological variety. The limestone and marly soils of the north give structure to the wine, while the granitic hills of the south provide clear mineral nuances. The result of this combination is a sip endowed with a harmonious balance and a vibrant gustatory energy.
How it is produced
The vinification begins with a soft pressing of the grapes to extract pure musts and preserve their original fragrances. Primary fermentation takes place in temperature-controlled stainless steel tanks, keeping the fruit's vitality intact. After blending, the base wines undergo re-fermentation in the bottle, a distinctive step of the Traditional Method that defines the distinct Brut profile. Ideally served between 6 and 10 °C, it pairs beautifully with shellfish, poultry dishes and fruit desserts.
