Where it comes from
This Chianti Classico originates in Tuscany, in the picturesque village of Lamole. The grapes grow on terraced vineyards situated six hundred metres above sea level and cultivated using the Guyot method. This unique hillside microclimate promotes excellent aromatic ripening of the grapes. The altitude of the vineyards is fundamental in shaping the wine's character, enhancing the natural varietal expression and encouraging a harmonious tannic structure. The entire production cycle follows the strict principles of organic farming, ensuring respectful management of the land at every stage.
How it is produced
The vinification process begins with spontaneous fermentation triggered by indigenous yeasts. This is followed by maceration on the skins in cement vats for about three weeks, essential for optimal extraction of aromas and colour. The wine then matures for eighteen months in French oak barrels, developing structure and elegance. This careful period of rest blends the delicate toasted notes of the wood with the richness of the fruit. The result is a defined and balanced wine, perfect paired with red meats, flavourful stews and mature cheeses.

Fontodi is a certified organic farm and covers 170 hectares, of which more than 80 are planted with vines. The principles of naturalness and sustainability inspire the agriculture that is practised: not only are no synthetic chemical products used, but an attempt is made to make the most of the company's internal resources by reducing external inputs. For example, the vineyards are fertilised using compost produced by combining pruning residues and manure from the farm's own Chianina breeding.
