Fina's Perricone is a still red wine that authentically reflects the character of the Sicilian lands. Made from Perricone grapes, it appears in the glass with a dense, concentrated ruby red colour. The flavour profile reveals a full and velvety sip, supported by a solid yet enveloping tannic structure that lends elegance to the drink. The pronounced personality of this label is expressed through a clear territorial vocation, making it ideal for pairing with rich dishes such as braised meats, semi-mature cheeses, and flavourful seafood dishes, like the traditional tonno alla ghiotta.
Where it comes from
This red wine is produced in western Sicily, between the areas of Marsala and Trapani, a region historically dedicated to viticulture. The vineyards are located at an altitude of 250 metres above sea level, a condition that encourages the development of an energetic and strongly distinctive aromatic profile. The vines are trained on a trellis system with Guyot and spur cordon pruning, maintaining a controlled yield that ensures the superior quality of the grapes. The climate and careful agronomic management guarantee a long persistence, typical of the island.
How it is produced
Harvesting takes place at the end of September, the ideal time to pick the grapes at the correct stage of phenolic ripeness. Vinification begins with fermentation in stainless steel, a technique chosen to preserve the fruit's fragrance. The wine continues its maturation in the same containers before completing the process with a six-month rest in the bottle, an essential phase to soften the tannins and harmonise the structure. The bouquet is characterised by intense notes of juniper and black pepper, followed by aromas of morello cherry, plum, tobacco, and distinctive vegetal hints that enrich the aromatic profile with clarity and depth.
