Wine making | From a selection of the best grapes harvested between September and October, the carefully destemmed grapes are vinified in modern stainless steel tanks, with maceration on the skins for an average duration of 25-30 days at an average temperature of around 26°C. |
Aging | Once the alcoholic fermentation is complete, the wine undergoes malolactic fermentation in French oak barriques where it remains for about 30 months. At the end of the ageing period, after carefully selecting the best barriques, it undergoes a further refinement of 6 months in the bottle. |
